    I had some tile guys from Italy working in my home for about a week. I let them have kitchen privileges and I would come home for lunch while these guys were cooking this same dish and my house was perfumed with garlic. The only thing they did differently is add chili flakes while cooking the garlic.

    Way better to use about a quarter of that oil to brown the garlic, then hit it was a small tab of butter To stop the browning of garlic and then add a good rich chicken stock. Same product but a hell of a lot healthier and more flavor.

    A very simple and tasty dish but, many people may be put off by the tedium of slicing the garlic paper thin. I suggest purchasing a dedicated garlic slicer particularly, the one made by OXO Good Grips (about $10 at Amazon). Professional results every time.

    I cut my garlic very thin, I use a razor blade & I also add basil to the dish, it gives it a semi sweet flavor….     I LOVE this recipe and have used it countless times. I’ve tweeted it a bit to make it my own.

    I add prosciutto, arugula, and mozzarella. Then make a balsamic glaze to drizzle on top-PERFECTION!
