Hi I know coconut oil is very popular to use now and days but I can't have coconut at all. What would be a great alternative to using coconut oil for this recipe? And how much of that alternative ingredient would I need? Thanks!

Stef, those muffins are just gorgeous, and really good for you. Maybe for a Monday video, you should make a healthy vegetarian pizza with carrots, broccoli, mushrooms, and olives, that would make any vegetarian happy, and I am patiently waiting for my healthy raspberry lemonade cookies to be made.
